SPINACH BALLS

                 3 eggs                

1/2 cup grated Parmesan Cheese

1 13.5-16 oz. can chopped spinach well drained

4 tablespoons, butter or margarine

1/8 teaspoon pepper

1 cup herb stuffing mix

1/8 teaspoon nutmeg

1/2 cup chopped onion

 

Preheat oven to 350 degrees.

 

In mixing bowl, beat eggs. Stir in remaining ingredients. Form into small balls, about 1 inch in diameter. Place on ungreased baking sheet.

Bake 15 to 20 minutes or until lightly browned. May be served hot or cold.

Makes 4 dozen.

 

They may be frozen and reheated in a microwave or oven.                           

Comment:

I don't like spinach.  Yet Karen made these for Christmas, and I soon found I had eaten all the ones on my plate and was looking around for more.  Although we had these with the main meal at Christmas, I could see having them as finger food while watching a football game with friends.  Since this is a wine-related site, I believe I'd try them with a bold white or a lighter red (we had a Sangiovese from Prospero Winery with the meal), and I wouldn't be surprised to see they cozied up to the right beer quite well.
