Grilled Curry Salmon - Grilled Asparagus - Wine Choice

Grilled Curry Salmon

2 tbsp. mayonnaise                               2 tsp. curry powder

2 tbsp. pineapple preserves                   2 (6 oz each) salmon fillets

or pineapple chutney

 

In a small bowl, blend together mayonnaise and curry powder.  Spread 1 tbsp. of preserves or chutney on each fillet.  Gently spoon half of the mayo mixture over the chutney.

Heat and oil the grill.  Place fillets skin side down on gas grill over medium high heat.  Grill 8-12 minutes or until salmon begins to flake.  Serves 2

Grilled Asparagus

 

3 1/2 cups water                      3 tsp. olive oil

1 1/2 tsp. roasted garlic            1 1/2 lbs. asparagus

1 1/2 tbsp. fresh chopped parlsey

Combine water, olive oil and garlic in a large bowl. Add aspargus and toss lightly. Let stand 5-7 minutes. Drain liquid. Season with pepper. Grill on medium heat for about 6 minutes, turning often. Sprinkle with parsley before serving.

WINE CHOICE

 

I think Karen comes up with these things on purpose to torture me.  Just so you know, I do not particularly like curry, I never liked asparagus, and I always have trouble finding a wine that really goes with that vegetable.

 

Now that we have that out of the way, I decided to just surrender here.  As I was grumbling, I asked Karen what she thought we should have with this and she said Chardonnay.  I said "Aha!"  Everyone knows I am on an Anything But Chardonnay kick lately.  I can say Chardonnay and blame any problems on her.

 

That settled, I started thinking about what we had and what might be available at the local wine store.  I rummaged around down under the basement stairs, but found only two bottles.  I liked one of those, so that is what we will try: Lambert's Vintage Wines Chardonnay from West Virginia.  Yes, West Virginia; we were down that way for a wedding, stopped in, and had a fine time.  Bought a case of wines, but we'll run out one day.

 

That means that, like you, we can't just drop by to pick up a bottle.  It is a few hundred miles to Lambert's.  So I started thinking about what might be down at the wine store more, and went by for a look.  I searched for wine I thought most of you might find if you went to the local store.  Here's what I came up with as suggestions:

 

Columbia, Chardonnay Columbia Valley 2001

Columbia Crest, Chardonnay Columbia Valley Two Vines 2001

Bogle, Chardonnay California 2002

 

If you are talking to someone in the wine store about what to choose, remember that asparagus is tough to match with.  I don't think you want a big, toasty-oak, mouth-filling wine for this.
